Filling the hole left by chef Jamie Lauren's exodus from Absinthe in Hayes Valley to Beechwood in LA, is South Boston native Adam Keough. And while he hasn't been on Top Chef or anything, the man's resume is nothing to sneeze at. Signore Lucchesi broke this news yesterday, and today over the EaterWire we get written notification of Keough's prior gigs: working under Joshua Skenes at Chez TJ in Mountain View and for Michael Mina at Arcadia in San Jose. At the age of 28, Keough also opened Stonehill Tavern for Mina at the St. Regis in Dana Point, CA as executive sous chef under Skenes again.
Stonehill earned three stars from the LA Times and Keough was named “Best New Chef of Orange County” by Riviera in 2007. Also notable, he was a semi-finalist for the James Beard Foundation's "Rising-Star Chef of the Year" in 2007 and 2008. The now 32-year-old chef states he's "influenced by the culinary simplicity of his South Boston roots." So we're on the edge of our seats to see how that pans out with Absinthe's brasserie fare. He starts on August 17th.
