The Bauerovore tries out Shimo, Doug Keane's new Healdsburg steakhouse where "it takes only one bite to understand the care that has been taken in procuring the best meat." The experience goes back and forth from here. Shimo sauce is "good, if a little sweet" and the Sunday three course fixed price deal is "least satisfying of my three visits." Then Bauer lists off a slew of sides and appetizers he tried and doesn't seem overly moved by anything except the price ("reasonable, in steak house terms") and the fact he's not stuffed at meal's end: "That just might be a modern breakthrough in steak house cuisine."
