Long-time Chez Panisse co-chef David Tanis is moving on to write his third cookbook and pen a column in the NY Times. Tanis leaves a pretty sweet gig. He spends half the year helming the kitchen at Chez, the other half in Paris writing cookbooks while co-chef Jean-Pierre Moulle takes over in Berkeley. Eater National points out, Tanis' recent tome Heart of the Artichoke is nominated for a James Beard Award. As he moves on to more authorly pursuits, Moulle will remain on. As of now, Tanis' replacemnt—who will begin work in 2012— remains a mystery.
