Big change is afoot at Saison. Now that chef-owner Josh Skenes has earned his second Michelin star, the restaurant will reduce its seating from 42 to 18, allowing for just one seating per night to experience the 12-course tasting menu. Prices will start at $198/person (including wine pairings). It doesn't stop there. Diners will also have the option to nab one of four seats at the chef's counter for an even more exclusive 16 course, $498/person experience. Spaces for the latter can be reserved and paid for in advance via SeatMe or the Saison website.
The change mirrors Coi's recent dining room changes, and the removal of some seats at Sons & Daughters. Similar to those restaurants, Skenes is looking to produce an even higher quality meal, while allowing for a much more interactive experience with diners. The new Saison format will roll out after the Thanksgiving holiday. Meanwhile, Skenes is still in negotiations for an undisclosed future location somewhere in the FiDi.
