Ed Levine, who just so happens to have judged Iron Chef, is taking issue with Sietsema's 'unveiling' of the show: "I have always been told that the competing chefs know that the secret ingredient ... it doesn't take anything away from how insanely difficult it is to produce five dishes in an hour in that kind of pressured environment. I have judged Mario Batali, Bobby Flay, and Cat Cora in action, and ... they still sweat bullets and work their asses off because it is, in fact, a real competition and they don't want to be embarrassed in front of their peers, the judges, the audience in Kitchen Stadium, and the viewers at home." THE MISSION—Since the impending arrival of Udupi Palace in the current Firecracker space was announced some weeks back, we've received several reports and inquiries regarding the happenings at 21st and Valencia. Some have wondered if the swap is still happening, since Firecracker has taken down the liquor license notices. It is indeed still taking place, but not until "probably the end of the month." From the Eater Inbox comes some delectably juicy gossip regarding Ryan, one of the locals appearing on the upcoming season of Top Chef: "What chef from Myth was seen yesterday working as a waiter at pier 23 cafe? Ryan...thats who. Do with the info what you will. Hear he is a very nice guy. Guess he didnt win the $100,000 if he is working as a waiter at pier 23 cafe." UPDATE: Pier 23 Cafe has indeed confirmed that Ryan is currently training as a waiter, so now the question becomes: red herring or spoiler? [Eater Inbox]

Reacting to the Charlie Rose Alice Waters Interview
For some reason, no local food personality polarizes people quite like the first lady of local organica, Ms. Alice Waters. While no one doubts her status as a influential revolutionary in the gastronomic sphere, many worship her as a bohemian goddess and others see her as a glorified elitist. The truth probably lies somewhere in between, but in the wake of the Charlie Rose interview, both sides have arrived in spades in the Rose show comment fields for our amusement and yours. Some dismiss Alice as a "dippy lady" who gives an awkward interview, others question if she even took a trip to the local market to look for elusive February pears, and simply, many applaud her for her work. Our favorite, as it stands, is the following poetic composition about the "dear soul" left by one "Eileen":

Alice Waters on Charlie Rose, With Pears and Radishes
Last night, none other than Alice Waters appeared on Charlie Rose. Looking especially regal in the interview, Waters not only gives the usual rundown of her agenda—Slow Food, Edible Schoolyards, her book, how great Gavin Newsom is—but also has some candid moments (despite that odd accent of hers; has anyone else wondered about this?). In addition to providing a delightful mise-en-scene of pears and radishes, she admits that she hasn't cooked at Chez Panisse in 24 years, criticizes New York for not having adequate pears, fondles said inadequate pears throughout the interview, and at the end, is endearingly mortified when Rose reveals the gifts she brought to him. Quite possibly coming soon to a supermarket newsstand near you: "There has been talk in the past few months that several staff members of Every Day with Rachael Ray were being hired by another company to fill up slots for a competing magazine. Now it looks like those rumors might be true. Portfolio is reporting that Hearst and Scripps are going to team up with Food Network to create a new food and lifestyle magazine based on the network."
