In a Q&A session, Grant Achatz discusses, among other topics, how his style differs from that of his teacher, Thomas Keller: "A lot of times in protégé relationships there is some mimicking, but side-by-side it was so different. Off the cuff, there are so many more ingredients and texture manipulation on our plate than his.
