2008_03_cc.jpgIncanto offal aficionado Chris Cosentino—and his recipe for "Brains and Eggs" (yes, an actual dish; and a butcher's treat, even)—has inspired quite possibly the best thing we've heard all day: a rock song that features lyrics taken directly from the recipe. Our favorite line is the delightfully macabre, Lecter-esque "Serve the brains on warm plates with a piece of buttered toast," and the chorus begins something like this: "Two calves' brains, one teaspoon salt! One tablespoon lemon juice, one tablespoon white wine!" ... Um, just listen to it. [Offal Good]
