Chris Cosentino is in New York putting on his famous Head to Tail dinner and the Incanto man takes a moment to explain the ethics and thought process behind the meal: "For me, it means that you're willing to eat every part of every animal, so if you're willing to kill it, you should shut the fuck up and eat it all ... it's being able to utilize all these different part from different animals that most people want to throw in the garbage can." The video is quick but has tons of info and is highly recommended viewing, particularly for Bay Area denizens. And goodness, would a book publisher please pick up his cookbook already?
