Restaurants & Institutions has released its annual list of the 100 highest-grossing independent restaurants in the country. Tao in Las Vegas was the big winner by a landslide, grossing over $66 million, almost $30 million more than the second-place Tavern on the Green. Not surprisingly, New York and Vegas restaurants dominate the list, and only four San Francisco restaurants made the cut: #23 Scoma's ($16,288,000), #59 Boulevard ($12,590,716), #70 The Slanted Door ($12,200,000) and #79 Cliff House ($11,800,000). The lesson here: across the country, never underestimate the tourist dollar. [R&I]
