Epic Bauer Love

2008_04_epicsmall.jpgFor third time in a fortnight, The Bloggin' Bauer drops a curious line about the glory of Pat Kuleto's Epic Roasthouse, once again setting up his April 13th Epic review to be a starry affair (barring any coy red herrings, natch): "The steak at Stark's tasted fine, but that was because it had a thick, caramelized crust that carried the flavor. It couldn't compare to what I had that same week at Epic Roasthouse, where the meat is dry-aged for 28 days. Because I had already finished my review ... I called chef-owner Jan Birnbaum to get his take on wet aging. Like my father, he doesn't like it." [BauerBlog]
