started "an occasional series" (heh) about food supply, and today's installment highlights a Japanese farm-raised bluefin tuna called Kindai, the rarest tuna of them all. Only a single shipment of Kindai—usually three whole fish—is flown to the United States per week, one going to New York and the other two to the Bay. The local restaurants that score this superfish?
