Earlier, Bauer suggested that this year's James Beard Awards opened the door for the little guys, but Outstanding Chef winner Grant Achatz says it represents a victory for molecular gastronomy: "I talked about that with Thomas [Keller], and we do feel like [the award] set sort of a tone ... this is a step in the right direction. When people cast their votes for us, for a restaurant doing this hyper-modern food, for such a significant award, I think that sets some sort of precedent." [Tribune]
