The James Beard Foundation just released its first State of American Cuisine, a study attempting to figure out if American cuisine actually exists. They surveyed chefs, journalists, academics and foundation members to discover the following: yes, there is indeed an "American cuisine" but they can't agree on what it is, "cowboy food and recent immigrant dishes" can and do share space on the national plate, and the most American food of all is the hamburger.
