The good stuff is around the 11-minute mark, when the NapaStylist talks about how he'll compete with Thomas Keller, why he's returning to the restaurant business, the timeline for Bottega ("late fall"/November?), the history of the building, and has some glowing words for the team he's assembled, including one guy with a French accent and handlebar mustache.
