And already, Knowlton is predicting trends and highlighting the importance of Gaston Acurio, and his local pier project La Mar Cebicheria Peruana, as the first high-profile ambassador of Peruvian cuisine in the United Sates, or as he puts it, "a Batali of the Andes."
