Bocuse Update: Spot Check, Team USA Training Center

Yountville: Back in September, Lords Keller and Boulud (and co.) decided that French Laundry sous chef Timothy Hollingsworth would be representing Team USA in the international Bocuse d'Or competition. Since then, Hollingsworth—alongside his commis Adina Guest and his coach Roland Henin—has been holed up for months of intense training at the specially-designed Team USA Training Center. Said center is on the grounds of The French Laundry and features a test kitchen that replicates the same kitchen that will be in Lyon. Last week, the chef duo completed a practice run—which is five and a half hours for two intricate dishes—and Daniel Boulud, Paul Bocuse, and Jerome Bocuse just happened to fly in for feedback and the like (bonus: a first-hand account of that is here).

Oh, and did we mention it's crunch time? The competition takes place in Lyon on January 27th and 28th.
