An editor at the Merc isn't incredibly surprised with the Gourmet news, as she wonders how much cash they must have been burning: "Each of the 1,000 dishes in [Reichl's] new book was tested 12 times. As features editor of the San Jose Mercury News and guardian of that department's budget, I mulled the significance of those 12,000 tests and the phalanx of staffers and multiple test kitchens it must have required."
