A final note on the big Bauer review of the French Laundry for those with sharp eyes. It should be pointed out that, unless the dish has been tweaked (we're guessing not, but always possible), Mr. MB made a mistake with regards to the signature dish of the most famous chef in America: "After warm bites of tiny gougeres that release a fragrant vapor of cheese, the meal begins to ramp up with the signature cornets: chopped ahi in a bite-size cone filled with creme fraiche." Of course, it's the salmon cornet that is Sir Keller's signature dish, not ahi. [EaterWire]
