EaterWire: Orson's New Menu, Fringale's New Chef, MORE!

SOMA—After all the tweaks at Orson in the last year, Elizabeth Falkner is now heading the kitchen, and she has released the latest incarnation of the menu. Zagat has a copy of the new version, which includes an "explosive Caesar salad" and a foie gras burger. [Zagat]

SOMA—Speaking of that stretch of Fourth Street, Fringale has named a replacement for the departed John Marquez, who is in the process of opening Artisan Bistro across the bay. The new chef is named Aurelien Crosato, and he'll add some Basque dishes to the menu; he was most recently at Clementine and San Mateo's 231 Ellsworth. [Scoop]

TOP CHEFFAGE—In preparation for tonight's Top Chef finale, baldy Stefan shares some interesting tidbits about how he is milking his newfound fame. Among other items (he's still in love with Jamie, yes), he wrote a memoir called Dirty Dishes which is due in May ("he describes [it] as akin to Anthony Bourdain's Kitchen Confidential, only dirtier") and he's going to release a clothing line called Cocky Chef Clothing.
