2008_08_ohalice.jpgWriting for CNN/Fortune, Alice Waters tells the story of her startup experience, revealing the following tidbits, among others: Chez Panisse lost $40,000 in its first three months when it was open daily from 7:30am to 2am, nowadays she only owns an eighth of the business, the restaurant has an open kitchen so "customers can walk into the kitchen and ask for seconds" (please someone do this and report back), and for anyone wondering, there is no Chez Panisse Las Vegas in the works.
