Since Genovese chef Paolo Laboa fled from Farina, the team has announced his successors. Starting sometime this fall, brother and sister chefs Fabrizio and Serena Rebollini will tag team in the kitchen, helping to shift the restaurant's focus away from the Ligurian items of yesteryear to a sampler platter of "the very best" from all parts of Italy. The Rebollinis, who come from Liguria, the birthplace of pesto, will also help develop a line of pestos and sauces for retail sale under the Farina name. The restaurant also takes this opportunity to introduce new Roman chef Valerio Martorelli and Sicilian pastry chef Salvatore Di Stefano. We'll keep you posted as new menus and items are developed.
