Tonight Cyrus mastermind Douglas Keane is opening his second spot in Headsburg, Shimo Modern Steak. Like recent high-end additions to San Francisco Alexander's Steakhouse and Michael Mina, it's got an Asian lilt. A glance at the menu reveals Keane tempering the indulgence of the American steakhouse with the minimalism of Japanese cuisine. Deconstructed sides, extra charges for certain steak sauces and nothing but a sweet gratis bite for dessert step outside the realm of the expected.
Now GrubStreet has some nice color on chef de cuisine Kolin Vazzoler's take on steak. Most cuts will be of the thick, dry-aged prime beef persuasion finished "to create a wonderful crust and delicious umami flavor." According to Inside Scoop, Keane will oversee a three-course $49 price fix Sunday supper finished with something traditional like a sticky bun.
