This weekend, at the Bocuse d'Or finals at the Culinary Institute of America's HQ in Hyde Park, New York, NYC's James Kent won the honor of representing America at the world's respected culinary competition in Lyon, France next year. Kent is currently the sous chef at four-star Eleven Madison Park, and with his commis, Tom Allan (also of EMP), he beat out 11 other chef teams from across the country. The competition was close, with strong performances from Jennifer Petrusky of Charlie Trotter's and California rep Percy Whatley of The Ahwahnee, with Whatley taking top honors in the meat category for his lamb dish.
