Mill Valley's Tyler Florence updates Grub Street on the status of his many projects, including the Wayfare Tavern, which he says is set to open in May (barring further labor disputes, one would imagine), while the Rotisserie & Wine fast-casual resto is due to open in July or August. Also, he gives an idea of what to expect from the updated El Paseo: "We'll be sourcing everything except salt, pepper, and wine right from Marin County," says Florence, though he says he's working on local salt, too.
And if those projects aren't enough, he's got a new cookbook coming out in October and signed on with Mondavi to produce four varietals. Yet he manages to find time for a swing down to Cabo, probably to hang with El Paseo partner Sammy Hagar. This man is a machine.
