Chef Bruno Chemel was ejected from Chez TJ in December with "stinging words and bitter emotions" by Proprietor George Aviet who felt the one Michelin star he earned for the restaurant during his near two year tenure just wasn't good enough. Now comfortable at Palo Alto's Baume, Chemel has most of the former Chez TJ staff with him, and he can play around with as much liquid nitrogen as he fancies under his own rules: "I'm working for my customer here.
