Anderson Cooper stopped by the Colicchio & Sons kitchen last week to chat with Tom about the recent reports on the poor state of food safety in the U.S.. The Top Chef host recommends staying away from frozen beef patties where e. coli is potentially ground into the beef before it can be cooked off, and also buying shoulder meat and muscle from a local butcher. While he acknowledges that buying meat this way is definitely more expensive, Tom suggests that it's possible to keep the cost down by eating less of it and consuming other sources of protein such as fish, vegetables and legumes.
