To begin with, the Winged Bauer flutters into Bettina Rouas' Angèle in Napa, where the cuisine of ex-La Folie chef Patrick Kelly proves ethereal indeed: "On every dish you can see Kelly's mastery of technique...[and] each combination has a creative juxtaposition."
