Josh Skenes' A La Carte Menu On Hold at Saison, Possibly Until Launch of New TBD Wine Bar Concept

When Saison reopened in late June, we mentioned a forthcoming casual a la carte dining menu to eventually be served on the new terrace only; but when there was no mention of said menu in Bauer's glowing review today, we decided to check in with chef owner Josh Skenes to see what's going on. As it turns out, so many folks have been reserving terrace seats for the 8-course tasting deal that he's decided to put the a la carte thing on hold for now.

The more casual format will certainly show up when he launches the pop-up wine bar concept -- with the working name of Dcantr -- in the Stable Cafe space, but Skenes tells us a lot still needs to be nailed down. When he unveils the new concept in October, we can bank on a vegetable-centric a la carte menu cooked with the same ingredients and methods used at Saison; so it will be a more casual way to experience chef Skenes' cuisine. Mark Bright is also expanding the wine offerings into more highly regional offerings for the new launch; so there's lots to look forward to. [EaterWire]
