Joining the camp of Italian restaurants catering to gluten-free needs, is FiDi mainstay Palio D’Asti, which just released a designated gluten free menu. Naturally, it's full of carb-free options, but chef owner Dan Scherotter says he is also using "naturally gluten-free" pizzocheri (an Alpine-style fresh buckwheat tagliatelle), two different winter risottos, and a gluten-free polenta mixed with buckwheat. Scherotter also says that the people of Northern Italy who eat his style of polenta "live longer than anyone else in Europe." So there's that. [EaterWire]
