Five years ago El Huarache Loco was one of the first businesses to get off the ground with the help of local incubator La Cocina. The owner, Mexico City-born Veronica Salazar went on to garner a serious following serving street food and family recipes inspired by her youth. She now has an Off the Grid food truck and makes regular appearances at the Alemany and Marin Farmers Markets, supporting her family with a thriving business.
Yesterday, La Cocina announced the fairy tale will continue with Salazar's plans to open El Huarache Loco Restaurant, her first brick-and-mortar offshoot sometime this winter in the Marin Country Mart. Salazar will continue to use locally sourced ingredients to recreate the food she grew up with. Expect more on the restaurant's menu and design as the opening nears. [UPDATE: Additional details have just filtered in over the EaterWire. The El Huarache Loco Restaurant will be a fast-casual operation with 37 seats inside and lot of outdoor seating.]
