Bourbon Steak's Omri Aflalo Makes "Beef With Broccoli"

As part of Chinese Food Week, Eater asked a number of excellent non-Chinese restaurants to come up with a special Chinese dish as a tribute to the week. A number of chefs not only heeded the call, but got really into it. Every day this week, we'll be highlighting a different Chinese Food Week special, starting with Bourbon Steak executive chef Omri Aflalo's makeover of Chinese take-out classic "Beef with Broccoli." Instead of stir frying, Aflalo cooks a Brandt Farms triangle cut short rib sous vide, then finishes it with a pan sear and ginger-soy glaze. It's served with spicy Chinese broccoli, micro broccoli, brown butter potatoes, Ito Togarashi threads, and black sesame seeds. Aflalo likes the dish because its stays with Bourbon Steak's steak house shtick and French technique while playing into Eater's Chinese call-to-action. Find it on the dinner menu for $49 every night this week.
