William Werner's New Hospitality Group, and More!

WILLIAM WERNER WIRE - The ever so talented former Quince pastry chef William Werner is back in action after his Tell Tale Preserve Co. was forced to shut down in Aug. The good news is he's formed a hospitality group called Outfit Generic with some folks from Tell Tale and the founders of locally based Taiwanese tea brand Naivetea. They've also announced their first project: a commissary kitchen and patisserie out of Bayview with a TBA name. There might even be a farmers market stand in the works once things get running. It sounds like they've got other concepts in the works too. According to their PR, each future concept "will have its own location, name, brand, menu, etc.," and they won't be limited to pastry. WAFFLE WIRE - The Belgian Leige waffle specialists of Suite Foods will be baking their goods to order this Friday at Duboce Park Café from 2 p.m. to 6 p.m. SFoodie can tell you more about what exactly a Liege waffle is (hint: delicious!). And She Who Hops Tables says that the esteemed Benwaffle® has been trademarked and will be celebrating two years in existence with a "traditional bacon/maple syrup combo, plus a banana/Nutella version" this Sunday from 11 a.m. to 2:30 p.m. at Bar Jules. THE MISSION - Bon Appetit magazine has boldly placed the Flour + Water team's forthcoming Central Kitchen (782 Florida St.) high-end culinary incubator and Salumeria (3000 20th St.) retail project on its "5 Hottest Restaurant Openings in America in 2012" list. We're told the concepts will open in spring of 2012, despite what the magazine has published. It's official, Flour + Water is a media darling. [Bon Appetit, EaterWire]

THE MISSION - 7x7's Sara Deseran takes a bite out of 16th Street's brand new Dear Mom, one week after opening: "...it's clear these guys are putting as much if not more effort into their food as they are their Old Fashioneds." The early snapshot calls the potato-leek soup "exceptionally silky smooth", baked trout "a happy surprise," but the grits in the shrimp and grits? "Lumpy". Thankfully, there's lots more on the way.
