"elaborately inscribed arms" showed up on the cover of Food & Wine mag and editor-in-chief Dana Cowin got flak ("They're heathens"). But really: "Once considered the province of sailors, bikers, ex-cons and, of course, college hipsters, tattoos have become standard attire in professional kitchens, a symbol of culinary culture as surely as a toque."
