The French-Californian small plates restaurant going into the former Bar Crudo/Swell location at 603 Bush St., Bouche will open on Thursday. As you can see from this picture, work has been done to fancify the interior with gold touches and weathered-seeming walls. The dinner menu will focus on Mediterranean and Provencal flavors with Californian ingredients, and wines will hail from California and France as well. The owner, Guillaume Issaverdens says the food uses modern techniques to create food that is both "simple" and "different." The guy who's going to execute that is chef Nicolas Borzee, a former sous of two years at Coi . Before that, he was at Le Louis XV, Alain Ducasse’s three Michelin star restaurant in Monaco, France.
