We know Paul Owens (Tortilla Heights, Fishbowl) is putting something shiny and new into the Gravity space in the Marina. Turns out it shall be a "high-end" bar called Hudson, not Gypsy Tea Room, which is actually just the name of his LLC. Here Owens, who wrote The Little Green Book of Absinthe, will put together a list of "great, classic cocktails." He mentions muddled drinks and a fresh greyhound will definitely be included. The aim is to be a nice spot— "not cliche" — for people that want to go on a date or grab a drink before or after a meal at nearby spots like Bin 38, Mamacita and Tipsy Pig. Agreed it's mostly dive bars in the area except, of course, the newly remodeled Matrix. (And does anyone know how that's going?) Owens will also offer appetizers like edamame poppers and a cheese plate. The search for his chef is on and details on the interior will be ironed out soon. Expect this puppy to open on or around June 1.
