Tres Agaves' transformation to Tres tequila lounge and Mexican kitchen is completed today. The bar area is now larger and refurbished. Partners Eric Rubin and Barry Augus are officially no longer with the company as they move on to manage and grow the Tres Agaves tequila brand. And remaining operational partner Dave Stantos moves forward with bar manager Ashley Miller and chef Kelvin Ott to take the beverage and food programs to new places. The tequila list has expanded to include 150 plus tequilas, all of which are explained in a tequila book functioning much like a wine list in that it lists tequilas according to region, terroir, etc. There are also new cocktails that add a tequila spin to classics such as the negroni and the manhattan. Sounds dangerous. And we'd like to try that. The kitchen will take the month of March to start expanding focus beyond Jalisco with the full menu 2.0 ready to go in April.
