Nine-year-old Windsor restaurant Mirepoix will be closed until June 7th for some much needed repair work. The wine country charmer is built in an old home; and even though it just got a Michelin star, executive chef Matthew Bousquet and his wife, GM Bryan D. Bousquet are thinking about redoing the concept. Bousquet will continue to crank out the classic French fare at his nearby Bistro M throughout the repair period. [UPDATE: The concept change has boiled to the surface. Mirepoix will be using the next month and change to completely transform into Momma Pig's "a down-home bbq joint." Inside Scoop has more on all this. [ISSF]
