Energy levels are, naturally, extremely high right now at the future site of Locanda as Craig Stoll, Annie Stoll and staff members gear up for the big opening day next week. Pre-opening jitters and craziness will begin to coalesce into calm as the staff approaches its first test dinner this Friday. Annie Stoll has solidified an excited team of 30 for the front of house at her forthcoming Roman restaurant. Having run the service at Delfina and both Pizzeria Delfinas since day one, this woman knows hiring. We've got a two-part series coming at you today and tomorrow, probing behind the scenes of the Locanda opening through the lens of the staff. Here, for the first part, we bring you an excerpt from the Locanda "Facebook" experiment, Annie Stoll's own creation to help ease the getting-to-know-you process for the future Locanda team.
