The W Hotel is closing its 12-year-old restaurant XYZ after service on Sunday to get on board with that sustainability movement thing that's been hitting hard for the past decade or so in these parts. Its replacement, the Stanley Saitowitz-designed Trace will bring a "local personality" to SoMa when it opens this summer, and an in-house forager to boot. The restaurant's name neatly references its focus on "traceable ingredients" and "socially responsible eating." XYZ's executive chef Paul Piscopo will continue on with the new concept, which should open this summer. Once that's over and done with, look out for the welcome desk and bar at the W to be remodeled in a similar vein. More details forthcoming as this approaches.
