Just about four months after Vincent Schofield put in a new menu at Mission izakaya Nombe, he's out due to "other commitements," as the press release so nicely puts it. Owner Mari Takahashi—who's had a hand in the menu since day one, even when Nick Balla was chef—will take over the kitchen with former Zero Zero executive sous chef Pierre Mangé by her side as chef de cuisine. "I am excited to introduce American diners to ingredients and dishes that are typically not found outside of Japan," says Takahashi in the requisite release quote.
Schofield's food was deeply (overly?) California-inspired; perhaps she's loosely referring to that. And why the hasty departure? Well we know Schofield has his taco place. Then there's Bauer, who just knocked a star off Nombe's rating and then dropped them from the Top 100. Maybe that has something to do with it.
