David Kinch was recently in New York, cooking up a casual spin on Manresa's fare at the James Beard Foundation's pop up restaurant. He sat down with Eater National to talk about many things: his new deanship at the West Coast French Culinary Institute, the move away from "figs on a plate," and his desire to open another restaurant: "It's not going to be the art project that Manresa is. I'd certainly like to have a casual concept, and that's why I was intrigued with the pop up. I just haven't figured out how to do that." [-EN-]
