Dcantr, the casual pop-up at the Stable Cafe from Saison chef Josh Skenes and Mark Bright, closed in February. The plan was to tweak the concept and reopen fairly soon as a "raw bar." But the space has remained dark during the evening; and now Skenes tells us it will be back, he just doesn't know when. Also it won't just be a raw bar, per se. There will be oysters, raw fish and creative crudo along with "simple cooked items" from the hearth. Although the original small plates concept, which opened in November of last year, was very well-liked, it put too much strain on the kitchen. Skenes, hot off a Food + Wine Best New Chef tap, is naturally adamant about keeping Saison as his first priority. When he's ready to go live with Dcantr, Bright's blend-to-order wine will be back in action again too. More as this develops.
