Last year Sean O'Toole left the restaurant at LEED-certified resort Bardessono in Yountville for an alluring post as culinary director at Michael Tusk's Quince and Cotogna restaurants. After an extended period of executive chef-lessness, Victor Scargle starts this week as O'Toole's replacement. He leaves a position as a chef instructor at the Culinary Institute of America Greystone for the new gig. Over the past 20 years, Scargle has done stints at Go Fish, Julia’s Kitchen at Copia, Jardinière, Grand Café and Aqua. FWIW his style described as "clean, simple, and bright."
