Towards the end of this video snippet from The Cooking Channel's Food {ography}, Chez Panisse alum and Camino chef, Russell Moore addresses "the big slam on Californian cuisine that we don't have any technique." After footage of Moore butchering and stringing up a rack of lamb over his wood-burning oven and demonstrating his "ridiculous way to cook artichokes," it all closes with the chef's blasé Cali response to the opinion that West Coast professional cheffing is just shopping: "I'm cool with that."
