Above, we have shots of The Dining Room at the Ritz-Carlton, before and after demolition begun last week. It's hard to believe the image at right was the site of champagne popping and foie eating just two weeks ago when the restaurant served it's last meal. This picture here was snapped from the entrance of the space. Over the coming months, the wall bordering the kitchen will be chopped up to create a window into a new chef's table, the entrance area will be shifted over to the right to create a larger, more dramatic connection with the lobby, and the entire room will be opened up to make room for a more prominent bar and lounge area. The name for the new concept has yet to be announced, but you can bet there will be seasonal cocktails, sharable plates, and communal dining involved. As noted yesterday in Big Deal Restaurants to Watch, the new incarnation should be unveiled some time in December.
