In light of an upcoming July 2012 ban on foie gras in California, San Francisco chefs are reacting in different ways. Gary Danko and Traci Des Jardins plan to adjust their menus to fill the void, although they're not happy about it. Thomas Keller is more resigned to it. And some chefs, like La Folie's Roland Passot, think the luxury item will go underground: "The foie-gras lovers will get their fix somewhere, somehow." [Bloomberg via -EN-]
