Welcome to the Eater video feature Untouchables. In it, Eater highlights cult-followed dishes that are practically synonymous with the restaurants that serve them. They are dishes that persist through menu changes, that diners return to again and again, that chefs can't remove for fear of revolt.
Chef Melissa Perello has had the 'Lumberjack Cake' on her menu at Frances since day one, and she doesn't plan on removing it, ever. The dessert is based on several classic lumberjack cake recipes, but Perello mixes the usual "ooey, gooey" topping components into the body of the cake, along with seasonal fruit. Perello serves the cake warm with a dusting of powdered sugar, fresh Medjool dates, and a healthy scoop of maple ice cream made especially for her by Humphry Slocombe.
