Joanne Weir and Larry Mindel are moving forward with their Sausalito Mexican restaurant Copita, and today Weir tells Eater that she's found her right hand man for the kitchen: former Zero Zero executive sous chef Omar Huerta. A native of Jalisco, Mexico, Huerta will be getting back to his roots for the project, and the menu is coming together too. A large rotisserie will form the focal point in the kitchen, churning out the menu's signature spit-roasted chickens. Several taco options, ceviches and small plates will round out the options. Weir's documented tequila obsession will come to life in eight or so cocktails. Seasonal sangrias and wine on tap will also be served. Designer Anthony Fish has picked a cheerful white and burnt orange color palette to play off the existing hardwood floors and bar. Construction began a few weeks ago, and the opening will probably happen some time in April or May.
