Michael Mina has the first Ecopia in-kitchen garden installation in San Francisco, allowing him to buck the seasons a bit and serve—say—Australian truffles in the summer. Sure, the "special grow lights" use a lot of energy, but there's the carbon footprint advantage (due to fewer truck deliveries), and it only takes 12 oz. of water to grow a head of lettuce.
