The opening of West of Pecos has been delayed until tomorrow, but you can still get inside today by taking a long look at the interior gallery above. As you can see, it's a very big space, with over 100 seats to offer to Mission diners, and owner Dylan MacNiven says they're encouraging large groups. A beautifully buffed Texas longhorn skull, reclaimed barn doors and large open kitchen warm up the main dining room. Doors on the left lead into a second dining room that will double as a private dining space. Custom lighting and another painted bull skull snazz up the bar. Read up on the rest of the back story here, and remember the food will include lots of meats and vegetables roasted Southwestern-style in a Wood Stone hearth. Try it out for dinner starting Tuesday at 5 p.m. Facebook. Website.
