The opening of West of Pecos has been delayed until tomorrow, but you can still get inside today by taking a long look at the interior gallery above. As you can see, it's a very big space, with over 100 seats to offer to Mission diners, and owner Dylan MacNiven says they're encouraging large groups. A beautifully buffed Texas longhorn skull, reclaimed barn doors and large open kitchen warm up the main dining room. Doors on the left lead into a second dining room that will double as a private dining space. Custom lighting and another painted bull skull snazz up the bar.
